I was reading the back of the packet for an Old El Paso fajita mix and was shocked to discover that the first ingredient was sugar in the packet mix. It doesn’t taste particularly sweet so I’m not sure why they need to put it in. With lots of people enjoying fajitas, I thought a healthy, sugar free version would be good. You can serve these with wraps, large lettuce leaves as an alternative to wraps, brown rice or salad. They’re also great for kids too as you can make a mild sauce for them

Serves 4

1 tbsp coconut oil

3 large chicken breasts

1 red onion

1 red pepper

1 yellow pepper

1 green pepper

400g can chopped tomatoes

1/2 can water

2 tsps mild chilli powder

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp ground cumin

1 tsp paprika

1 tsp garlic powder

  1. Melt the coconut oil in a large frying pan then add the onion and chicken. Brown the chicken then add the remaining ingredients to the pan and leave to simmer for 20 minutes until the chicken is thoroughly cooked. Serve with brown rice, wraps, salad etc or your own choice of accompaniments.
