The other day I’d bought some turkey to use instead of chicken. I find I use lots of chicken and wanted something different but when I was googling for recipe inspiration, everything was either based on Christmas dinner and the leftovers or really stodgy and carb based so I made up my own and it was delicious as well as being low carb too.

Serves 4:

1 tbsp coconut oil
2 small red onions/ 1 large, finely sliced
3 cloves garlic, crushed/ sliced
3 turkey steaks, cut into strips
2 leeks, finely sliced
1 courgette, cut in half lengthways then finely sliced
1 tin chopped tomatoes
10 fresh cherry tomatoes
200ml coconut milk
2 tsps madras curry paste
Freshly ground black pepper
1 tsp ground cumin
1 tsp ground coriander
2 tsps ground turmeric
1 tsp chilli powder

1. Melt the coconut oil in a large saucepan then add the onion and fry for 5 minutes before adding the garlic for 2 minutes. Add the turkey pieces and brown before adding the remaining ingredients and simmering for 30 minutes. Serve with brown rice or cauliflower and broccoli mash (see below for recipe)

Broccoli and cauliflower mash

Serves 4

1 large cauliflower cut into florets
1 large head broccoli cut into florets
Juice of half a lemon
Pinch of salt
Freshly ground black pepper

1. Steam the broccoli and cauliflower until soft (20 mins approx) then blitz in a food processor with the remaining ingredients. Check the seasoning then serve.
